Quick Fried Rice

Ingredients:


  • Can of Chop Chop! Chicken Teriyaki

  • 3-4 cups of cooked, cold rice

  • 2-3 tsp sesame oil

  • 1-2 tsp soy sauce and/or hot chilli sauce

  • 2 eggs beaten

  • 2 cups frozen mixed vegetables

  • Spring onions, chopped

  • Fresh coriander, chopped

Directions:


  • Heat half the oil in wok (or a large non-stick frying pan) on high heat.  Add beaten egg and cook for 1 minutes while stirring until egg is just scrambled.  Remove cooked egg and set aside.

  • Heat the rest of the oil and add the rice and frozen vegetables to the wok.  Toss/stir for 3-5 minutes until all ingredients are hot and just starting to brown.

  • Add Chop Chop! Chicken, egg mixture, soy sauce and/or chilli sauce.  Gently stir through.

  • Take off heat and garnish with spring onions and coriander (if desired).
