Quick Fried Rice
Ingredients:
- Can of Chop Chop! Chicken Teriyaki
- 3-4 cups of cooked, cold rice
- 2-3 tsp sesame oil
- 1-2 tsp soy sauce and/or hot chilli sauce
- 2 eggs beaten
- 2 cups frozen mixed vegetables
- Spring onions, chopped
- Fresh coriander, chopped
Directions:
- Heat half the oil in wok (or a large non-stick frying pan) on high heat. Add beaten egg and cook for 1 minutes while stirring until egg is just scrambled. Remove cooked egg and set aside.
- Heat the rest of the oil and add the rice and frozen vegetables to the wok. Toss/stir for 3-5 minutes until all ingredients are hot and just starting to brown.
- Add Chop Chop! Chicken, egg mixture, soy sauce and/or chilli sauce. Gently stir through.
- Take off heat and garnish with spring onions and coriander (if desired).
